Separation of Sediment: The conical shape of the tank allows sediment (such as grape skins, pulp, and solids) to naturally settle at the bottom of the cone during fermentation. This sediment can be easily removed without disturbing the rest of the wine, making racking (transferring wine from one container to another) and clarifying the wine easier.

Improved Yeast Management: As fermentation progresses, yeast cells also settle at the bottom of the conical tank. This can aid in yeast management by allowing for easy yeast harvesting or removal, which is particularly useful for winemakers who wish to reuse yeast for future fermentations.
